Place first 7 ingredients in a food processor
Blitz until comes together into a ball (takes 3-5 mins).
While food processor is working line a loaf tin with baking paper
If you have chosen to use dark chocolate on the top, you can also get this melted. I either use a double boiler, or for a small quantity like this I do short 30 second bursts in the microwave on 50% power)
Press the mixture into the loaf tin
Top with the melted chocolate
Refrigerate for 2 hrs

Instructions for Weetbix Slice:
- I was so excited to hear about the Weetbix Kids Cupcakes, and knew it would be perfect for the 2-year-old I have myself, so I made a kid’s version for the blog!
- What? Another cupcake? What??? Yup, another Weetbix Slice! You will find mine already in the freezer, and I’ve been making it for the past couple of days, so I hope you love it too!
- You should really, really enjoy this Weetbix Slice too. A large serving would make a healthy, balanced meal. It’s also pretty easy.
- I used store-bought vegan chocolate chips, which makes them more spreadable and yummy, but if you prefer, you can make yours with my vegan chocolate cookies and butter cookies (in a food processor) to make them even easier to spread for eating later, or with other savory, non-dairy fillings.
