Yummy Lemon Slice Recipe

Lemon Slice

Ingredients
 3 cups Digestive biscuits
 1 cup Desiccated coconut
 Zest of one lemon
 ¼ cup butter
 1 cup sweetened condensed milk
 3 tbsp fresh lemon juice
 1 cup icing or powdered sugar
 1 tbsp fresh lemon juice
 1 tbsp milk
 Lemon zest for decoration

Directions

Place broken biscuits into a food processor and mix until fine crumbs form. Pour biscuit crumbs into a large mixing bowl.

Add coconut and lemon zest and stir to combine. Heat butter in the microwave until melted and smooth.

When biscuit crumbs are completely coated, pour into your baking tin. Press down firmly using the back of a spoon to form one even layer.

Place the slice in the fridge for at least 1 hour to set before making the lemon icing.

To make the icing, simply combine sugar, lemon juice, and milk. Stir until smooth.

Pour icing over the cookie base and put back in the fridge for at least another hour. To serve, sprinkle with fresh lemon zest and cut into squares. Store slice in the fridge.

Instructions for Lemon Slice:

  • To make Lemon๐Ÿ‹ Slice๐Ÿž, first things first into a bowl I’m putting one and a half cups of plain flour 1/2 a cup of icing sugar or confectioners sugar or powdered sugar depending on where you come from, and 150grams of butter which I have just melted in the microwave and just mix those together what you’ll end up with is this sort of dough-like consistency it looks a bit like shortbread and sort of kind of is so just make sure it’s all nicely mixed together and now we’re going to press this into a pan.
  • I’ve got a lamington pan here which I’vegreased and lined with baking paper this is about 18 by 28 centimeters and I’m just going to transfer a dough mixture into the pan there we go and just using your fingers press it in until it covers the bottom and that’s that mixture pressed in there I’ve knitted up all the edges to make sure it’s all nice and even and smooth this goes into a preheated oven at 180 degrees Celsius for 15 minutes in the meantime lets sort out our lemon topping in our Bowl.
  • we have one can of sweetened condensed milk about 400 grams or 400 miles depending on how it’s marked and to thatI’m going to add one egg and we’re just going to beat those together until they’re smooth I’m adding in two tablespoons of self-raising flour now if you don’t have self-raising flour to feel free to substitute for two tablespoons of plain flour and add one teaspoon of baking powder.

  • I’m also adding in half a cup oflemon juice and mix them togetherthat’s our base out of the oven and allwe have to do is pull this mixture overthe top mixture is smooth over top thisgoes back into the oven same temperature180 degrees Celsius preheated for aboutthirty minutes or until the top has setand that’s the slice out of the oven.
  • I’ve let it cool on the side for about ten minutes or so and now I’m going to place it into the fridge for about an hour or so just to cool off completely.
  • Then we’ll be ready to slice it up and here we have our finished lemon slices and these are just gorgeous they have this beautiful lemon smell and I am ready to have a taste mmm YUM look at that sort of buttery almost like a shortbread base and got that beautiful almost creamy lemon layer on top absolutely divine well I hope you’ve enjoyed this recipe. ๐Ÿ™‚
